This ssamjang was created with ssambap in mind, a type of korean lettuce wrap (recipe coming soon!). It tasted so good that I had to find more ways to use it, and so it has become my go to for bibimbap and onigiri too. This ssamjang does not need a huge amount of gochujang, unlike some other, similar condiments, so it’s easier to adjust the spiciness to suit you.

Ingredients

  • 40g onion (brown or red, about ½ a small onion) diced
  • 2 tbsp sesame seeds
  • 1 to 3 heaped tsp gochujang (Some are not gluten free)
  • 2 tsp toasted sesame oil
  • 2 tsp soy sauce, or tamari for gluten free
  • 2 tsp maple syrup

Method

Heat a frying pan over a medium high heat until hot. Add the sesame seeds and toast until just starting to turn golden, toss the pan continuously to prevent the sesame seeds from burning. Once cooked immediately put the sesame into a bowl to cool to avoid them cooking any further.

Once they have cooled down a bit, blend the sesame seeds to a dough like paste, you can alternatively use a pestle and mortar to grind the sesame seeds into a paste if you don’t have a blender up for the task.

Add the rest of the ingredients to the blender and blend until you have a smooth paste.
